Our Story

Nooch began as a pipe dream from our founders Luke and Alex. After turning to a plant based diet through personal beliefs, they noticed a lack of eateries offering a good variety of plant based meals in Shrewsbury. Like many others, they began to feel eating out became a chore rather than a pleasure, and soon started discussing their ideas.

Luke having worked in hospitality as early as 2006, had always dreamed of opening his own restaurant, but always thought it out of reach. Then along came the property located down Barracks Passage, a beautiful historic building located down a cobbled passage full of character. Alex knew this was their chance and encouraged Luke to follow his dreams telling him that they at least have to take a look. They fell in love with the property that had been selling vegetarian food since the 70's and got to work. 

Several months later, after a lot of hard work, Nooch came to life on the 8th December 2022!

In the Kitchen

We like to look for suppliers who are not only local, but who also want to change the world for the better! We have an ethos at Nooch, where our produce should have as little environmental impact as possible. Not only this, the producers should be as passionate and excited about the food they create as we are! We look at our ingredients and respect them, taking the best seasonal and local produce, and turning them into dishes that are packed full of flavor.
